Rice and Curry
I got this recipe during a cooking lesson in a place called Matey Hut in Ella, Sri Lanka.
All curries are listed from the middle-top, then going clockwise.
Okra curry (Ladyfingers)
- 100 grams okra
- 1 teaspoon raw curry powder
- 1/4 teaspoon Tumeric powder
- 1/2 salt
- 1/2 teaspoon cinnamon
- 1 teaspoon onion chopped
- 1 teaspoon Garlic
- 1 teaspoon green chilli
- 1 teaspoon of curry leaves
- 1 cup of coconut milk
Steps: Take a pan and out cut okra and all the other ingredients, add coconut milk too cook until tender.
Eggplant curry
- 1 big eggplant
- 1 tablespoon onions
- 1 teaspoon garlic
- 1 teaspoon green chilli
- 1/2 teaspoon ginger
- 1 teaspoon curry leaves
- 1 teaspoon chopped tomato
- 1/4 teaspoon cinnamon
- 1 teaspoon raw curry powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon mustard seed
- 1 teaspoon roasted curry powder
- 1 teaspoon roasted chilli powder
- 1/2 teaspoon black pepper powder
- 1/4 teaspoon fenugreek
- 1 teaspoon mustard cream
- 1 tablets spoon viniger
- 2 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon cinnamon/cards man powder
- 2 cups coconut milk
Steps: cut eggplant like French fries & deep fry until golden brown, keep a pan on fire & add coconut oil & all ingredients except tomatoes & tempered. Put coconut milk & make gravy. then add fried eggplant/tomato & gently tossed & get.
Banana curry
- 100g banana (green veggie)
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon Blake pepper powder
- 1 teaspoon raw curry powder
- 1 teaspoon mustard cream
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1 tablespoon onions
- 1 teaspoon green chilling
