Miso Ramen Express
Ingredients (2 persons)
Broth
- 3 garlic cloves
- 2 tbsp miso
- 2 tbsp tahini
- 2 tbsp peanut butter
- 1 can of coconut milk
- 5cm grated ginger
- 2 spring onions (whites for broth, greens for topping)
- 500 ml vegetable stock
- 150g Udon noddles
Meat prep
- 200g meat mince beef
- 3 tbsp Teriyaki sauce
- 1 tbsp soy sauce
Topping
- sesame seeds
- green onion greens (finely chopped)
- chili crisp
Steps
- in a hot pan, cook the meat. Once cooked through, stir in the soy sauce and the teriyaki sauce until glazed and sticky. Put everything aside.
- In the same pan, sauté the grated ginger and sliced spring onions.
- Stir in the miso, tahini, and peanut butter. Mix constantly for 1-2 minutes to toast the pastes without burning them.
- Pour in the coconut milk and the vegetable stock. Bring to a gentle simmer. The texture should be smooth and creamy.
- In a separate pot, prepare the noodles according to package instructions. Note: you can also cook them in the broth.
- Assemble and enjoy!
