Miso Ramen Express

Ingredients (2 persons)

Broth

  • 3 garlic cloves
  • 2 tbsp miso
  • 2 tbsp tahini
  • 2 tbsp peanut butter
  • 1 can of coconut milk
  • 5cm grated ginger
  • 2 spring onions (whites for broth, greens for topping)
  • 500 ml vegetable stock
  • 150g Udon noddles

Meat prep

  • 200g meat mince beef
  • 3 tbsp Teriyaki sauce
  • 1 tbsp soy sauce

Topping

  • sesame seeds
  • green onion greens (finely chopped)
  • chili crisp

Steps

  1. in a hot pan, cook the meat. Once cooked through, stir in the soy sauce and the teriyaki sauce until glazed and sticky. Put everything aside.
  2. In the same pan, sauté the grated ginger and sliced spring onions.
  3. Stir in the miso, tahini, and peanut butter. Mix constantly for 1-2 minutes to toast the pastes without burning them.
  4. Pour in the coconut milk and the vegetable stock. Bring to a gentle simmer. The texture should be smooth and creamy.
  5. In a separate pot, prepare the noodles according to package instructions. Note: you can also cook them in the broth.
  6. Assemble and enjoy!
