Hulk Burger (broccoli patties)
Ingredients: (4 persons)
- 500g of broccoli
- 2 slices of soft bread
- 1 egg
- 100g of dry mozzarella
- 1 shallot
- 1 clove of garlic
- cayenne pepper
- salt, pepper
Steps
- Roughly cut the broccoli (keep the small trunks but remove the big ones).
- Put the broccoli in a pot of salted water. Boil for 10mins. Then plunge them in ice water to stop the vegetables from cooking. Drying the broccoli with a tea towel.
- Toast the bread.
- Mince the shallot and the garlic.
- Put all the ingredients in a food processor and mix everything. You want to keep some texture, don’t pulse too much.
- Shape 4 burgers (you can use ring moulds).
- Cook slowly (we want the cheese to be melted!).
