
Dahl (Green)
Ingredients: (4 persons)
- 1 can of coco milk or coco cream (400ml)
- 200g red lentils
- 2 large handfuls of fresh spinach
- a bunch of coriander
- 1 onion
- 1 leek
- jalapeño pepper (optional)
- Curry paste(~1-2 tablespoon)
- 2-3 garlic cloves
- Ginger (2 - 2.5cm)
- Vegetable stock (60ml)
Steps
- Finely chop the onions, leek, garlic and the fresh ginger, then set aside.
- Blend the spinach with the cilantro, one jalapeño pepper, the coconut milk, and the juice of half a lime. Blend until it’s smooth.
- In a hot pot, temper the spices. Then sauté the onion, ginger, and garlic (~2 minutes)
- After rinsing the red lentils, add them to the pot. Pour the stock, and add the spinach soup mixture
- Simmer for 20–25 minutes
- Serve with 1/4 lemon and cilantro
