Dahl (Green)

Ingredients: (4 persons)

  • 1 can of coco milk or coco cream (400ml)
  • 200g red lentils
  • 2 large handfuls of fresh spinach
  • a bunch of coriander
  • 1 onion
  • 1 leek
  • jalapeño pepper (optional)
  • Curry paste(~1-2 tablespoon)
  • 2-3 garlic cloves
  • Ginger (2 - 2.5cm)
  • Vegetable stock (60ml)

Steps

  1. Finely chop the onions, leek, garlic and the fresh ginger, then set aside.
  2. Blend the spinach with the cilantro, one jalapeño pepper, the coconut milk, and the juice of half a lime. Blend until it’s smooth.
  3. In a hot pot, temper the spices. Then sauté the onion, ginger, and garlic (~2 minutes)
  4. After rinsing the red lentils, add them to the pot. Pour the stock, and add the spinach soup mixture
  5. Simmer for 20–25 minutes
  6. Serve with 1/4 lemon and cilantro
