Chive pesto

I have a chive plant on my balcony that’s producing a ton. I once had the idea to make pesto out of it, and it turned out to be a great idea. I use it in pasta, croque-monsieurs, and even on pizza!

Ingredients

  • 50g chives (roughly chopped)
  • 55g olive oil
  • 40g parmesan (grated/roughly chopped)
  • 40g pine nuts
  • 30g lemon juice
  • 1 garlic clove
  • salt, pepper

Notes: pine nuts can be replaced with almonds (blanched)

Steps

  1. In a blender, add the chives, the parmesan, the lemon juice and the clove.
  2. Mix for a few minutes
  3. While mixing, slowly add the olive oil and the pine nuts. I add the nuts at the end so it keeps a grainy texture.
  4. Season with salt and pepper. Be gentle with the salt; parmesan is already salted!
