Chive pesto
I have a chive plant on my balcony that’s producing a ton. I once had the idea to make pesto out of it, and it turned out to be a great idea. I use it in pasta, croque-monsieurs, and even on pizza!
Ingredients
- 50g chives (roughly chopped)
- 55g olive oil
- 40g parmesan (grated/roughly chopped)
- 40g pine nuts
- 30g lemon juice
- 1 garlic clove
- salt, pepper
Notes: pine nuts can be replaced with almonds (blanched)
Steps
- In a blender, add the chives, the parmesan, the lemon juice and the clove.
- Mix for a few minutes
- While mixing, slowly add the olive oil and the pine nuts. I add the nuts at the end so it keeps a grainy texture.
- Season with salt and pepper. Be gentle with the salt; parmesan is already salted!
