Broccamole (broccoli guacamole)


  • 1 broccoli
  • < 1/2 lime juice
  • 1 shallot (or 2smalls)
  • 1 clove of garlic
  • 1/2 cayenne pepper
  • 2 tablespoons of double-concentrated tomato
  • coriander leafs
  • 10 cl of olive oil
  • salt, pepper


  1. Roughly cut the broccoli (keep the trunks).
  2. Put the broccoli in a pot of salted water. Boil for 10mins. Then plunge them in ice water to stop the vegetables from cooking.
  3. Put everything in the food processor (apart from the shallots and the coriander). Mix until you have a nice and smooth texture.
  4. Adjust lime, salt and pepper if needed.
  5. Then, add the shallots and the coriander. Pulse for 1 or 2 seconds. To mix everything.
