Broccamole (broccoli guacamole)
Ingredients:
- 1 broccoli
- < 1/2 lime juice
- 1 shallot (or 2smalls)
- 1 clove of garlic
- 1/2 cayenne pepper
- 2 tablespoons of double-concentrated tomato
- coriander leafs
- 10 cl of olive oil
- salt, pepper
Steps:
- Roughly cut the broccoli (keep the trunks).
- Put the broccoli in a pot of salted water. Boil for 10mins. Then plunge them in ice water to stop
the vegetables from cooking.
- Put everything in the food processor (apart from the shallots and the coriander). Mix until you
have a nice and smooth texture.
- Adjust lime, salt and pepper if needed.
- Then, add the shallots and the coriander. Pulse for 1 or 2 seconds. To mix everything.
