Rice and Curry
I got this recipe during a cooking lesson in a place called Matey Hut in Ella, Sri Lanka.
All curries are listed from the middle-top, then going clockwise.
Okra curry (Ladyfingers)
- 100 grams okra
- 1 teaspoon raw curry powder
- 1/4 teaspoon Tumeric powder
- 1/2 salt
- 1/2 teaspoon cinnamon
- 1 teaspoon onion chopped
- 1 teaspoon Garlic
- 1 teaspoon green chilli
- 1 teaspoon of curry leaves
- 1 cup of coconut milk
Steps: Take a pan and out cut okra and all the other ingredients, add coconut milk too cook until tender.
Eggplant curry
- 1 big eggplant
- 1 tablespoon onions
- 1 teaspoon garlic
- 1 teaspoon green chilli
- 1/2 teaspoon ginger
- 1 teaspoon curry leaves
- 1 teaspoon chopped tomato
- 1/4 teaspoon cinnamon
- 1 teaspoon raw curry powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon mustard seed
- 1 teaspoon roasted curry powder
- 1 teaspoon roasted chilli powder
- 1/2 teaspoon black pepper powder
- 1/4 teaspoon fenugreek
- 1 teaspoon mustard cream
- 1 tablets spoon viniger
- 2 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon cinnamon/cards man powder
- 2 cups coconut milk
Steps: cut eggplant like French fries & deep fry until golden brown, keep a pan on fire & add coconut oil & all ingredients except tomatoes & tempered. Put coconut milk & make gravy. then add fried eggplant/tomato & gently tossed & get.
Banana curry
- 100g banana (green veggie)
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon Blake pepper powder
- 1 teaspoon raw curry powder
- 1 teaspoon mustard cream
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1 tablespoon onions
- 1 teaspoon green chilling
- 1 teaspoon curry leaves
- 1/4 teaspoon fenugreek
- 1/2 teaspoon garlic
- 2 cups coconut milk
Add all ingredients in to cut banana & add milk & cook until banana get cook
Pumpkin curry
- 100g pumpkin
- 1 tablespoon onions
- 1 teaspoon garlic
- 1 teaspoon green chilli
- 1 teaspoon curry leaves
- 1/4 teaspoon turmeric powder
- 1/4 teaspoon cinnamon
- 1/4 teaspoon fenugreek
- 1/2 teaspoon salt
- 2 cups coconut milk
add all ingredients to the pumpkin and cook for 15 minutes add powder and mix well.
Mangoes curry
- 1 mango cut into 8 pieces
- 1 tablespoon onions
- 1 teaspoon garlic
- 1 teaspoon green chilli
- 1 teaspoon curry leaves
- 1/2 teaspoon ginger
- 1/4 teaspoon turmeric powder
- 1/2 teaspoon raw curry powder
- 1 teaspoon roasted chilling powder
- 1 teaspoon cinnamon
- 1 teaspoon mustard seeds
- 1/2 teaspoon fenugreek
- 1/2 teaspoon salt
- 2 tablespoon sugar
- 1/2 teaspoon black pepper powder
- 1 cup coconut milk
heat pan & add oil and add all ingredients except spicers, then cut mangos add, cook until mango cook
Dhal curry
- 2 cups dhal (soak)
- 2 tablespoon onions
- 1 teaspoon garlic
- 1 teaspoon green chilli
- 1 teaspoon curry leaves
- 1/2 teaspoon turmeric powder
- 1 team spoon chilling powder
- 1/2 teaspoon black pepper powder
- 1/2 teaspoon salt
- 1 cup coconut milk
add all spices & other ingredients in to dhal and coconut milk & cook until dhal soft. Keep another pan put little oil & heat & put little onion/curry leaves /mustard seeds & 2-3 chilli peaces & temper & add to cook dhal
Coconut sambol
- 2 cups scraped coconut
- 1 teaspoon chilli crumbs
- 1/4 tag spoon chilli powder
- 1/4 teaspoon black pepper powder
- 1/2 teaspoon salt
- 1 teaspoon onions
- 1/2 teaspoon green chilli
- 1/4 teaspoon garlic
- 1 lime
- 1/2 teaspoon curry leaves
Add all ingredients to a blender and chop until juice paste, and add coconut & add lime juice
Coconut Rotti
Ingredients
2 cups All-purpose flour 2 cups scraped coconut Salt to taste
Method Add all ingredients together. Add Luke warm water and make a dough. Cook Rotti both side in dry a dry pan
Banana Fitters
- 2 cups all-purpose flour
- 1/4 teaspoon vanilla essence
- 3 teaspoon sugar
- 1/4 teaspoon baking powder
- 1 cup water
Add all ingredients together to make a batter Peel the bananas and split them in half lengthwise. Dip in the batter and deep fry
Pumpkin curry powder
- 1/2 cup rice
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seed
- 03 piece cinnamon
- 01 teaspoon curry leaves
- 1 cup scraped coconut
- 2 nos cardamom
- 3 nos clove
heat a pan and add all ingredients, roast and grind.
Rice
- 2 cups rice
- 1/4 teaspoon salt
- 1/4 teaspoon curry leaves
- 2 no’s cardamom
- 2 no’s clove
- 1/4 teaspoon cinnamon
Wash the rice three times Put other ingredients Add water up to the first line of your middle finger level. Cook rice to 30min
